Each multi-course meal reveals the clever use of sustainable produce from Southeast Asia and Japan, prepared in a modern French style

 

The refreshed Odette reflects Julien Royer’s decade-long evolution, retaining its French foundations while expressing a more nuanced Asian sensibility. The Hokkaido botan ebi, glazed in yuzu kosho and paired with bafun uni pain perdu, is a study in texture, while Crab Contrast offers a restrained nod to Singaporean chilli crab. Heritage remains central through signatures such as kampot pepper–crusted pigeon and a Jeju abalone and foie gras duo served in a yuzu-inflected pork broth inspired by bak kut teh. Alongside its established wine programme, Odette has also introduced a thoughtful non-alcoholic pairing. The space, anchored by Dawn Ng’s new artworks, features timber marquetry and mohair velvet in tones of pale beurre and tawny umber, giving the room a warmer and more contemporary character.
