Championing his philosophy of “crossroads cooking”, chef-owner Ivan Brehm opened Nouri in 2017 after honing his craft at Mugaritz, Per Se and The Fat Duck. A meal here begins with a handwashing ritual in the reception area before guests step into the convivial dining room and open kitchen, where chefs work alongside diners at a communal table. The tasting menu evolves continuously, driven by exploration and refinement rather than rigid notions of fine dining. Bluefin tuna sushi, for instance, is a nod to narezushi—believed to be sushi’s Southeast Asian predecessor—and is paired with idli, a fermented rice cake, and prahok, a Cambodian fish paste. Mani’oka celebrates Brazil’s staple tapioca, served here with prawn, sambal and local herbs to highlight the meeting of two tropical biospheres. Reflecting the chef’s eclectic spirit, the atmosphere is warm and inviting, with music, service and wine that feel warm and personal.
