While each dish is impeccably plated—with intricate arrangements for the series of appetisers and desserts—the depth of flavour speaks for itself. Nishikane’s signature dishes are well-loved, taking on different iterations monthly as a true celebration of seasonality. Highlights include the fresh vegetable tempura; the signature iced Fukui soba, which sits within a hand-carved block of ice; and abalone served with a rich, buttery awabi-kimo sauce. Despite the variety of dishes served, every course is executed with technical precision, offering a feast for both the eyes and the palate.
