The kappo-style omakase restaurant is led by chef Nobuhiro Nishi, whose charisma and evident passion for his craft bring a sense of approachability to the experience. While each dish is impeccably plated—with intricate arrangements for the series of appetisers and desserts—the depth of flavour speaks for itself. Nishikane’s signature dishes are well-loved, taking on different iterations monthly as a true celebration of seasonality. Highlights include the fresh vegetable tempura; the signature iced Fukui soba, which sits within a hand-carved block of ice; and abalone served with a rich, buttery awabi-kimo sauce. Despite the variety of dishes served, every course is executed with technical precision, offering a feast for both the eyes and the palate.
