Set within a pristine white villa on Nguyen Cuu Van Street, Nephele captures the spirit of the “cloud fairy”—free, graceful, sophisticated, with a touch of mystery and enchantment. Drawing inspiration from the soft curves of Art Nouveau and the bold geometry of Art Deco, Nephele is a masterful symphony of opposites—freedom and discipline, precision and daring, tradition and innovation.

Chef Francis Tran, a Vietnamese chef acclaimed for his command of the fire-grill technique and reverence for local ingredients, leads the kitchen. Born in Buon Ma Thuot and trained under celebrated chefs in Vietnam and abroad, Francis weaves culinary creativity with exacting precision and bold expression, crafting flavours that are powerful, yet graceful and harmonious. Inspired by the cloud fairy of Greek mythology, Nephele becomes the living embodiment of his devotion to nature, flavour and artistry—a place where the rich culinary traditions of his homeland are honoured while new frontiers of creativity are fearlessly explored.

The centrepiece of the experience at Nephele is the seven-course tasting menu, where nature’s finest offerings are elevated by fire and an unrestrained imagination. Guided by the rhythms of the seasons, Francis reimagines the bounty of each harvest, unveiling textures and transforming ingredients into flavours that are both profound and delicate. His use of fire is not simply a technique, but a celebration of elemental purity, revealing deep layers of taste and expressing a philosophy of balance and audacity that makes every moment of the culinary journey captivating.

Nephele’s curated wine collection pays tribute to both tradition and innovation, featuring prestigious labels from classic regions such as Champagne, Burgundy, Italy, Germany and Austria. Alongside these legends, the list embraces a new generation of visionary winemakers, who champion biodynamic and organic practices, refining vineyard management and fermentation methods to extraordinary effect.
