At the elegant National Gallery Singapore outlet, she has prepared a menu of her greatest hits, from the humble kueh pie tee (julienned vegetables stuffed in crisp pastry shells and crowned with fresh prawn and a dollop of chilli paste), to beef rendang painstakingly prepared by braising beef shin for hours in coconut gravy made tastier with a concoction of spices, kaffir and bay leaves.
