Attention to detail and a respect for Chinese culinary traditions combine to make Mott 32 special. Inventive dim sum include luxurious creations like pork siu mai with black truffle and quail egg. You must pre-order the Iberico pork in honey glaze and the apple-wood-roasted Peking duck, but it’s worth planning ahead. Most Peking ducks in Singapore are made from frozen duck, but the version here uses the Malaysian variety that’s less fatty and gamey, but with the snap-crispy skin we love. Dishes are also presented with panache, turning every meal into a theatre performance—bird is carved at your table, while sauces are mixed into intricate patterns with a flick of the wrist. There’s an impressive range of Chinese teas, a stellar wine list and mixology programme inspired by the flavours of Asia.
