Meta represents the peak of chef-owner Sun Kim’s culinary evolution. The dining room feels deliberate and calm, eschewing unnecessary flourishes to keep the focus firmly on the open kitchen. Kim’s current menu is a profound exploration of his roots, delivering flavours that are assertive yet handled with a light, modern touch. The Jeju abalone is a standout—served with gamtae and a silky juk (porridge) that provides a rich, oceanic depth. There is a playfulness here, too. The tteokgalbi (grilled minced meat) arrives as a taco, using perilla and kimchi to cut through the savoury weight of the protein. The transition into sweets is equally thoughtful, particularly the Mont Blanc, which uses parsnip to ground the sweetness of the chestnut. Service is friendly, and the staff go out of their way to ensure guests feel welcome.
