Hyperlocal Indian ingredients find their way into each course of seasonal tasting menus at Mumbai’s Masque
Masque champions India’s regional ingredients through creative and seasonal chef’s tasting menus. Led by chef Varun Totlani and founded by restaurateur Aditi Dugar, the restaurant sources ingredients from across the country, from the forests of Kashmir to the coast of Tamil Nadu, creating dishes that highlight the diversity of Indian produce. The ten-course menu turns familiar flavours into unexpected delicacies in dishes like idiyappam and coconut stew with duck floss, and smoked spiced pork ribs. Each visit brings a new seasonal menu, so no two experiences are the same.
