Marguerite’s new look since opening its doors in 2021, a Michelin star seems to have been acquired in record time—it’s a tribute to the team, many of whom can be seen creating their magic at the open workstations

 

Set within the Flower Dome at Gardens by the Bay, Marguerite delivers a tasting journey that blends creative techniques with seasonal produce. The meal opens with snacks like the delicate kangaroo tail pho (an unexpected consommé)and a pristine kingfish crudo. A true signature moment arrives with the playful “Duck, Duck, Duck, Cherry”. This dish presents three expressions of the bird—built from a duck fat base, a foie gras centre and a cherry crown—offering a layered, texturally inspiring contrast of rich and sweet. The progression remains cohesive through the Patagonian toothfish with Obsiblue prawn and vadouvan—rich yet beautifully balanced—followed by the earthy coco bean and cep cassoulet. The savoury portion concludes with the masterful Challans duck. Desserts land gracefully, particularly the herb sorbet with Shine Muscat, followed by a nostalgic chocolate–peanut finale.
