Les Amis remains the gold standard for French fine dining in Singapore. At the helm is chef Sebastien Lepinoy, whose uncompromising leadership has kept the restaurant at the pinnacle of the scene for over a decade. The kitchen’s philosophy is built on an obsession with the French supply chain, sourcing almost every ingredient directly from France. The dining experience here harks back to the grand traditions of Parisian haute cuisine, where even the bread service is treated as a main event. That said, the sourdough arrives with a crisp crust, served alongside slabs of decadent Beillevaire artisanal butter. Another highlight is the cold angel hair pasta with caviar and seaweed—a dish that has achieved cult status for its delicate balance of brine and texture. The Brittany blue lobster is presented as a succulent salpicon and finished with a velouté of oyster jus and tapioca.
