Victoria Harbour does most of the talking at Lai Ching Heen. The restaurant stretches along the edge of Regent Hong Kong, where tables sit almost level with the waterline and ferries glide past the windows like part of the theatre. Yet the view never distracts from the point of being here: serious Cantonese cooking. The menu leans into dishes that reward patience and balance. The osmanthus hone-glazed crispy eel arrives crackling and aromatic, and the char siu, one of the restaurant’s signatures, comes bronzed and gently smoky. To finish, the double-boiled pear with decades-old tangerine peel is soothing and lightly fragrant, the sort of dessert that revives the most tired soul. Dining here rarely feels rushed. Plates appear at an easy rhythm, teas are replenished before cups run dry, and the harbour outside keeps shifting in colour as the evening unfolds.
