The focus at Sushi Kanesaka Hong Kong is simple: rice, fish and the hands that bring them together. The restaurant follows the lineage of master sushi chef Shinji Kanesaka, whose approach to Edomae sushi is built on precision, patience and a deep respect for ingredients. The setting reflects the same ethos. A sweeping hinoki wood counter, carved from a single slab, is at the centre. Seafood arrives from Japan with remarkable freshness and transparency about its provenance. Nigiri forms the heart of the experience, with traditional Edomae techniques—curing, marinating and careful ageing—used to draw out depth of flavour.
