Have a taste of Indigo’s Soy Caramel Glazed Sea Bream, available for lunch and dinner. This sumptuous seafood dish has a unique flavor combination of Sea Bream (local name is Bakoko), reduced caramel sauce, oyster mushroom and green peas paired with Tinawon red rice, a variety of heirloom rice from the Northern part of Luzon in the Philippines. Tinawon red rice is a rare heirloom rice of the Cordillera region and has been hand cultivated in high elevation terraces of the Philippines for generations. Within the Cordilleran cultures, rice is considered a precious gift from their gods that nourishes both body and spirit. Each dish will cost you around Php 695 nett per order.
