The spirit of the shokunin, or artisan, defines this omakase restaurant along Robertson Quay. Known for all-day course menus of remarkable value, Ishi offers four tiers of set meals. Each features prized seasonal catches from Japan, including hata (grouper), kuromutsu (bluefish), kinmedai (golden-eye snapper), aori ika (bigfin reef squid) and shima aji (striped jack). These are sensitively elevated by touches of Himalayan rock salt, shishito pepper, mallow leaf, yuzu kosho and lemon juice. Guests can witness this culinary showmanship from a low hinoki wood counter that seats 12, offering a clear view of the chef’s nigiri (sushi pressing) skills. As with any premier omakase experience, dietary restrictions are well accommodated. Even details such as wasabi and rice quantities can be tailored to a diner’s preference.
