Born in Kichijoji and now a fixture in Makati, Inosho Ramen is the definitive destination for Tokyo-style tsukemen. Led by chef Taisuke Nakamura, this modern izakaya specialises in a 48-hour tonkotsu-gyokai broth and thick, chewy dipping noodles. The menu has evolved to include a rich tan tan tsukemen and easy weekday sets. Pair your bowl with cauliflower kakiage or miso-layu gyoza to enhance the ramen through aji-hen (Japanese flavour-change tradition), all within a space that celebrates disciplined Japanese craft.
