Chef Kunihiro Hagimoto communicates through food, using Italian cuisine as his foundation while weaving in his Japanese heritage and the flavors and culture of Taiwan. His passion for gastronomy transforms each dish into a story — heartfelt, beautiful, and deeply personal.

Led by Chef Kunihiro Hagimoto, INITA embraces the dialogue between chef and guest. Taking Italian cuisine as a starting point, he infuses it with Japanese roots and Taiwan’s local ingredients and experiences, crafting flavors that are uniquely his own. Each creation is a reflection of sincerity and artistry, capturing emotion through culinary form.

The restaurant’s name, INITA, is born from the union of three cultures — Italia, Nippon, and Taiwan. Chef Hagimoto treats Italian cuisine as a canvas, painting with Taiwan’s seasonal produce and guided by the imagination honed through over two decades of experience in Japan and Italy. The result is a singular expression of culinary artistry — refined, soulful, and full of life.
