Imbue serves up contemporary European cuisine with Asian twists in an exploratory tasting menu format
The latest addition to the 1855 F&B group, Imbue occupies a zi char eatery’s former digs in a heritage shophouse along the bustling Keong Saik stretch. The warm and beautifully renovated space sets the scene for a progressive menu centred on Asian flavours combined with fine European cookery. From the open-concept show kitchen to the foyer cocktail bar, the team has designed a novel dining experience. Choose from two tasting menus or go à la carte—the former begin with a beguiling trio of delectable amuse-bouche which segue into seafood appetisers showcasing seasonal ingredients paired with clever Asian sauces. Abalone topped ginkgo nut chawanmushi bathed in preserved green chilli and pine nut is followed by grilled aji wrapped in potato pancake with pickled crudites and aged tangerine glaze. The signature “Malai” malt bread precedes the meat main of Wagyu aged with fermented bean. A comforting squid ink sausage claypot rice completes the savouries, setting the stage for the yuba pavlova with sesame oil and Meyer lemon curd.
