Chef Luca Fantin has lived in Japan for more than 15 years, and has absorbed plentiful Japanese culinary influences that inform his rendition of Italian cuisine. His dishes, filled with respect for nature and pure, clean flavours, are driven by ingredients and precise knife skills, with some cooked using a Japanese charcoal grill. Almost 90 per cent of the ingredients are from Japan, but they are used to replace those traditionally used in Italian cuisine. Many dishes only feature two or three ingredients, emphasising a minimalist approach and his reverence for nature. One level up is the Bulgari Ginza Bar, with creative cocktails that are perfect for before or after dinner.
