A stripped-back Japanese concept built around one thing done exceptionally well: charcoal-grilled hamburger steak and endless bowls of rice
The entire experience revolves around a single idea: hamburger steak, cooked properly. Diners sit around a counter encircling the charcoal grill, where cooks shape and sear thick rounds of 100 per cent beef hamburger steak. Each diner receives a set of three patties, delivered one by one so the final bite remains as hot and juicy as the first. The meat is lightly seasoned, allowing the natural flavour of the beef to carry the dish. Rice plays an equally important role. Bowls arrive glossy and steaming, ready to soak up the juices from the grill, and refills keep coming for anyone still hungry. Small accompaniments: raw egg, condiments and sauces, allow diners to tweak each bite as they go. By removing distractions, Hikiniku to Come turns what could have been an everyday comfort food into a small ritual worth lining up for.

Unless you’re dining solo, don’t rely on the walk-in queue as it can stretch for hours. Booking ahead when reservations open is by far the safest route to securing a seat.
