Named after the Japanese pronunciation of highball, HiBoRu (ハイボール) pays tribute to Japan’s beloved whisky-and-soda cocktail while reimagining it through a uniquely Taiwanese lens. The bar channels the nostalgic spirit of Japan’s Shōwa era (1926–1989) — a time that continues to influence Taiwanese culture long after the Japanese colonial period — resulting in a distinctive blend of heritage and modern flair.
The menu centres on highball-style cocktails, complemented by an inventive selection of signature drinks. On the food side, HiBoRu serves Taiwanese small plates infused with Japanese techniques and playful creativity.
