German classics revisited with a lighter hand, offering a rare glimpse of the cuisine beyond beer halls and sausages

 

German food doesn’t often make an appearance on Hong Kong menus. When it does, it usually arrives with steins of beer and plates built for appetite rather than finesse. Heimat takes a different approach. Here, chef Peter Find looks back at the dishes he grew up with and reworks them with a quieter, more considered touch. The tasting menu travels through familiar German territory but without the expected heaviness. Start with a velvety chestnut soup finished with shavings of black truffle, rich yet balanced by the earthy sweetness of the chestnuts, followed by cabbage roll filled with duck, its deeply flavoured stock soaking gently into the leaves, turning a humble German classic into something unexpectedly elegant. Later comes wild boar ragout with root vegetables and juniper berries, served with hand-shaved German noodles that carry the sauce with comforting ease. The room, designed by JJ Acuna, feels much like the cooking: polished but relaxed, modern without losing warmth. Staff guide diners through a wine list that proudly leans German, from mineral Rieslings to fuller reds that hold their own alongside the richer dishes.
