Fumée, located on the third floor of the Regent Taipei Hotel, is a sister restaurant to the renowned Osaka yaki restaurant Yakitori Ichimatsu. Their set menu features Taiwanese chicken dishes, utilizing the aroma of charcoal, varying heat levels, and cooking tools to achieve steamed, smoked, and fried chicken, exploring the possibilities of barbecue and elevating the dining experience.

 

"Fumée" means "smoke" in French. The logo design is inspired by the "Ding" hexagram from I Ching, which depicts wood on top and fire on the bottom. This symbolizes the burning of wood to cook food, and the process of raw food transforming into culinary dishes. Since ancient times, smoke has symbolized humanity's journey from cooking to discovering delicious food. The curling smoke from cooking food is even considered a channel of communication with the gods, a link between heaven, earth, and humanity, and a way for people to express their gratitude for the food bestowed upon them by heaven.

The main dining area is a bar surrounding the grill. Black iron and wood grain create a simple and neat space similar to the restaurant's "Yakitori Ichimatsu." Orange light strips symbolize the red-hot charcoal fire, discreetly hidden in the exhaust ducts and wall panels, subtly shaping the lines of the space, thereby highlighting the protagonist of the space - the hot yakitori. Guests can enjoy the joyful atmosphere of delicious food and wine with their hearty drinks.
