Fumée, located in Regent Taipei’s B3, is the sister restaurant of Osaka’s Yakitori Ichimatsu, serving a set menu that reimagines yakitori with Taiwanese chicken through grilling, steaming, smoking, and frying.

Fumée is located on the B3 level of Regent Taipei and is the sister restaurant of Osaka’s renowned yakitori house, Yakitori Ichimatsu. The set menu centres on Taiwanese chicken, prepared through fire and smoke—grilling, steaming, smoking and frying—pushing the boundaries of yakitori while elevating the dining experience.

The name fumée, meaning “smoke” in French, symbolises both the flavour and ritual of yakitori. The minimalist space is anchored by a counter facing the grill, with black steel, warm wood and glowing orange lights evoking smouldering charcoal. It’s designed to place the sizzling yakitori front and centre, celebrating food, drink and conviviality.
