Fu He Hui

Plant-based dining becomes haute cuisine in this vegetarian sanctuary
Tucked inside a multi-floor townhouse in Shanghai’s Changning district, Fu He Hui is a pioneer of plant-based fine dining in China. Led by chef Lu Katian, the restaurant treats vegetables and fungi not as substitutes, but as the star of the show. The seasonal tasting menu showcases a variety of rare and wild harvests, including mushrooms, herbs, heirloom roots and regional produce. Each course is crafted with precise temperature control and depth of umami, while incorporating traditional Chinese cooking methods like braising, smoking and double-boiling alongside Western preparations. The interior appropriately takes on Zen minimalism, featuring wooden tones, soft ambient lighting, stone accents and private rooms built for mindful dining.
