Wynn Palace is proud to present Chef Tam’s Seasons. The brand new conceptual restaurant is inspired by the 24 solar terms of Chinese traditional wisdom. Taking the helm of the new restaurant is Wynn’s Cantonese Master Chef Tam Kwok-Fung. Chef Tam revitalizes Cantonese cuisine by matching global ingredients with contemporary culinary techniques, complete with a food and nourishment philosophy that pays homage to seasonality.
Executive Chef Tam Kwok-Fung is revered around the world for his award-winning Cantonese cuisine, with accolades such as Michelin stars and placement on Asia’s 50 Best Restaurants, as well as being Macau’s first recipient of the Chef of the Year honour at the Black Pearl Restaurant Guide in 2023. Throughout his career, he has also served a number of dignitaries, from politicians to royalty.
Adopting a theme that coincides with Wynn Palace’s all-season blooms, Chef Tam’s Seasons captures the joy of refined Cantonese gastronomy with premium seasonal ingredients. This new establishment is proof of Chef Tam’s versatility to highlight and elevate his prowess in the Cantonese kitchen, as the chef and his experienced team have designed menus that pay homage to Chinese traditional wisdom in health and gastronomy. Inspired by the 24 solar terms where the availability of ingredients is highly seasonal and often fleeting, Chef Tam is adamant in preserving the spirit of the micro-changes of climate in each season that are iconic to Cantonese cuisine.

Through Chef Tam’s Seasons, I hope to reinvent and re-interpret the essence of Cantonese cuisine by introducing contemporary concepts, techniques, combined with playful creativity, in creating a new form of Cantonese cuisine that showcase the rich heritage of Cantonese cuisine with innovative flair,” Tam shared.
Besides Chef Tam’s 24 Solar Terms Degustation Menu, Chef Tam’s Seasons is instrumental in offering bespoke menu design service for its guests, where dietary preferences are considered in a tailor-made menu to facilitate a personalised dining experience. Chef Tam also offers a seasonal nourishing soup that changes according to each micro-season.
Tea art and the appreciation of fine wines and spirits are instrumental to an unforgettable dining experience, celebrating rich Chinese history and culture. Guests can enjoy a unique tea pairing menu throughout the meal, as well as artisanal brews and tisanes at the tea bar, where rare, compressed tea cakes are set on golden lotus display cases set against the floral glass mosaic decorative wall. To showcase rich Chinese wine culture, the experienced sommelier team has sourced a vast collection of Chinese baijiu, displayed on a custom-built baijiu trolley. Guests can enjoy a guided tasting flight accompanied by Chef Tam’s signature bar snacks for a truly remarkable baijiu experience.
