1. 15 Stamford by Alvin Leung

You’ve may have tried chef Alvin Leung’s modern Asian fare at his latest Singapore venture, but there are already new highlights to look forward to on your next visit. New additions to the menu include expertly grilled items, such as the appetiser of octopus tentacle that’s first cooked sous-vide, then flame grilled and enlivened with a sauce made with extra olive oil, parsley and laksa leaves.

For mains cooked on the custome made charcoal grill, the likes of dry-aged Australian bone-in ribeye, served to your preferred doneness alongside zingy sauces like the spicy peppercorn, Thai hollandaise and laksa chimichumi, are not to be missed. Even the French farmed whole turbot, lightly seasoned with salt and a good squeeze of lemon juice benefits from being cooked over the grill.

These come with sides of mashed potatoes studded with "salted fish bits", grilled cauliflower and grilled eggplant coated with saikyo miso and almond flakes.

2. Alma by Juan Amador

We come to this one-Michelin-starred establishment for its east-meets-west fare that is embodied in its carefully curated a la carte menu. But its new three-course set lunch boasts amazing value, too.

Take pleasure in savouring the appetiser—a choice between sweet kanpachi interspersed with daikon, toki apple and garden sorrel, and crispy tofu animated with a charge of foie gras emulsion and wild mushrooms.

For the mains, the kulbarra barramundi is also marinated in saikyo miso sauce and grilled to let its natural flavours shine, while the Challand duck is rubbed with black pepper and coriander seeds for extra oomph and first cooked sous-vide for perfect doneness.

3. Baan Ying

Craving a sumptuous Thai feast sans a flight out to Bangkok? Well, then drop by this popular restaurant chain from Thailand on weekends for The Great Baan Ying Brunch.

Each meal comprises a choice of one main course, access to the buffet spread of 12 to 15 appetisers, sides and desserts, and, should you decide to top up, freeflow drinks including beer and wine.

With choices like juicy Angus beef steak and bone-in Iberico pork chop, we won’t blame you if you go straight for the meat options. But if you’re a seafood fan, the serving of grilled large river prawns garnished with lemongrass floss, or even the pan-fried salmon steak drenched in a homemade seafood sauce will do just fine.

4. Braci

Sumptuous wines from Querciabella—including the best rated Chianti Classico—are the highlights of this not-to-be-missed dinner on March 9.

Chefs Beppe De Vito and Mirko Febbrile have prepared a North Italian feast that starts simply with some clever snacks, and progresses to more inspired deliciousness in the form of the foie gras carpaccio elevated with 100-year-old balsamic vinegar, endives and mushrooms; and sweet peas fermented in truffle gnudi and wild garlic.

The former is paired with the smooth and perfectly balanced Querciabella Mongrana, Maremma 2013, while the latter is served with the beautifully rich Querciabella Chianti Classico DOCG 2014.

There is much to look forward to in this seven-course dinner, which also includes pigeon served on a bed of smoked beetroot, cherries and rosehip jus, and veal cappelletti paired with the Querciabella Palafreno 2008 and the Querciabella Camartina 2010, respectively.

5. Sprmrkt

With so many International Women’s Day celebrations taking place this week, it’s only fitting that SPRMRKT, which is also celebrating its Cambodian festival until March 31, has invited the talented female twin chefs from the lauded Embassy restaurant in Cambodia to cook a tantalising seven-course dinner menu on March 8 and 9.

Kimsan Sok and Kimson Pol, legends in their home country for reviving forgotten Khmer recipes, will showcase signatures such as steamed scallops with locally grown green Kampot peppercorn, mushrooms and roselle flower sauce; and grilled duck on crispy brown glutinous rice cooked with lemongrass and finished with a turmeric green kako sauce.

Cocktails come courtesy of Sola, ambassador of Cambodian rum Samai, who will serve you an invigorating complimentary concoction dubbed the Aspara Blush, and three more tipples using their local rum. Have them a la carte or go for the Khmer Gastronomic Indulgence Bundle which pairs these quaffs with the set menu.
