1. 15 Stamford by Alvin Leung
You’ve may have tried chef Alvin Leung’s modern Asian fare at his latest Singapore venture, but there are already new highlights to look forward to on your next visit. New additions to the menu include expertly grilled items, such as the appetiser of octopus tentacle that’s first cooked sous-vide, then flame grilled and enlivened with a sauce made with extra olive oil, parsley and laksa leaves.
For mains cooked on the custome made charcoal grill, the likes of dry-aged Australian bone-in ribeye, served to your preferred doneness alongside zingy sauces like the spicy peppercorn, Thai hollandaise and laksa chimichumi, are not to be missed. Even the French farmed whole turbot, lightly seasoned with salt and a good squeeze of lemon juice benefits from being cooked over the grill.
These come with sides of mashed potatoes studded with "salted fish bits", grilled cauliflower and grilled eggplant coated with saikyo miso and almond flakes.
