Aperitifs in hand, we find ourselves inside Terra Ananta—the private farmhouse of Chef Deepanker 'DK' Khosla of Haoma—where an exclusive gathering of just eight guests is about to share an extraordinary evening around the dining table.

Our trip begins as we and seven other diners step across the threshold of Terra Ananta, Chef DK’s warm and wonderfully inviting family home. Shrouded by the seasonal monsoon mists and lush emerald peaks, this hidden sanctuary is rarely opened to the public. It is a level of access that feels profoundly personal, allowing for completely unguarded conversations with the chef about the deeply rooted inspirations behind his cuisine.

The evening settles over Terra Ananta with a cool breeze and the rhythmic, gentle patter of rain. It is a moment perfectly designed for slowing down. Leaving the relentless hum of the capital far behind, our group converges, glasses clinking softly against the soundtrack of the downpour as conversations begin to flow.

To whet the palate, Chef DK presents a procession of bite-sized snacks, each brimming with meticulous refinement. We sample a Beetroot Tartlette boasting an incredibly complex texture, alongside a beautifully balanced Scallop Pie Tee. These opening bites serve as the perfect icebreaker, effortlessly melting away any initial hesitations and filling the room with laughter and camaraderie.

As night falls, the true definition of 'Craft' comes alive through the 'Forest & Fire' dinner concept—a primal return to the very roots of dining. We gather around a family-style spread, sharing smiles and spectacular flavours, beginning with a vibrant Tomato & Peanut Salad and a decadent Avocado & Uni.

The main courses are brought to the table in a generous, simultaneous feast—a delicate Fish Moilee, melt-in-the-mouth Lamb Laal Maans, an intensely rich Butter Chicken, and a comforting Artichoke & Corn Curry. These arrive piping hot alongside tissue-thin Wargi Roti and fragrant, spiced Basmati Rice Pulao, before the meal is rounded off with the refreshing sweetness of Mango & Rice Kheer and a velvety Coffee Flan.

Many of the ingredients gracing our plates are seasonal bounties, planted and hand-harvested by the chef himself from the sprawling gardens just out the back. With mangoes and other native fruits blooming in a continuous cycle, the menu is a profound reflection of Thai 'Terroir'—a taste of the land’s raw abundance that simply cannot be replicated elsewhere.

Yet, the true highlight of this overnight retreat lies in the 'Immersion'. During the post-dinner storytelling, Chef DK sheds his Michelin Green Star mantle to become simply our host. Sitting amongst us, he candidly shares the passion that drove him into the culinary world. We hear the fascinating, winding tale of his journey—from abandoning dreams of the air force, to running food trucks in Laos and Cambodia, to finally opening Haoma. It is a story of grit that ultimately led to prestigious accolades, from Tatler Best to major Asian and global dining awards, cementing his status as a pioneer of sustainable fine dining.

The following morning, we are gently roused by the intoxicating scent of warm butter. Breakfast features Chef DK hand-rolling and baking fresh croissants, served alongside a robust shakshuka, premium cold cuts, and the sweet-tart zing of Golden Honey Passionfruit from the Royal Project. Accompanied by relaxed chatter and old-school vinyl records from his father's collection, it feels exactly like waking up at a dear friend's house (albeit one with extraordinary culinary prowess). It is a masterclass in restorative hospitality, flawlessly interweaving people, food, and the natural world.

The second stamp and a leap Back in time (Cadence by Dan Bark)

This extraordinary level of access is not confined to remote forest cabins; Visa Infinite Tastes also invites us to discover the culinary soul of the city at Cadence by Dan Bark. While most are accustomed to being ushered to a designated table in a formal dining room, this experience grants guests the rare privilege of stepping directly into the private kitchen and living quarters of Chef Dan Bark and Fay Tragoolvongse.

Limited to just 10 guests, the evening unfolds in a wonderfully intimate atmosphere, feeling more like a private dinner party at the chef's own home.
