The Italian restaurant’s new executive chef Sergio Landi welcomes Italy’s most prized seasonal ingredient with all new signature dishes

This autumn, Tsim Sha Tsui’s Paper Moon launches a series of new dishes to celebrate the arrival of white truffles. Sourced from Savigno in Northern Italy, the prized tuber is celebrated for its earthy aroma, showcased in the restaurant’s new white truffle menu created by new executive chef Sergio Landi. Highlights of the new truffle menu include 65-degree sous vide Paolo Parisi egg with truffle fondue, green almonds and asparagus; chestnut gnocchi with chanterelle mushrooms and spinach; and truffle pizza; Mains such as roasted guinea fowl with chard and mixed baby potatoes while dessert is truffle gianduja chocolate cake with white truffle semifreddo as dessert. Each dish from the seasonal menu is served with three grams of white truffles, shaved tableside at the time of serving. Guests can opt for more Italian white truffles for an additional HK$68 per gram. The seasonal white truffle menu is available from now until 30 November, 2020.
