Guests begin in the Tea Lounge, where a traditional Japanese tea ceremony awaits. A meticulously prepared cup of hot tea, served using classic ceremonial tools, gently awakens the palate. From there, the experience unfolds through three distinctive menus: Ame, rooted in pure Japanese identity; Izumi, a graceful fusion of Japanese and Vietnamese culinary techniques; and Biwaco, a bold exploration of rare ingredients drawn from global cultures.
