Savour ocean-friendly dishes crafted with certified sustainable seafood at Restaurant Petrus

Hong Kong is a global seafood trade hub with an ocean-focused culinary heritage. Responsible sourcing and consumption is crucial for this tradition to endure. Coinciding with World Oceans Day, Restaurant Petrus at Island Shangri-La is partaking in the fifth Sustainable Seafood Festival with a menu of conscious dishes that features prized catches sourced from MSC- and ASC-certified suppliers, available from June 1 to 30, 2026. 

Organised by the Hong Kong Sustainable Seafood Coalition (HKSSC), the festival promotes responsible dining in celebration of World Oceans Day across participating restaurants in Hong Kong, Macau and Singapore. Each venue will offer certified menus and dishes curated specially for the occasion. At Restaurant Petrus, dines can expect a fine-dining experience that is conscious and thoughtful, where every plate plays a part in protecting our oceans for generations to come.

A highlight is the Dutch Mussel, sustainably harvested and presented with creamy ratte potatoes and a luxurious sabayon (sauce made with egg yolks, sugar and sweet wine). The dish tells a story of mindful stewardship in the North Sea through a silky, elegant starter that celebrates its abundance without depleting its abundance. Another standout is the responsibly sourced Atlantic cod, served with fresh bok choi and a vibrant horseradish accent, where delicate cod flakes are complemented with crisp greens and a zesty kick.
