Sip cocktails and savour Thai cuisine at Thailand's first observatory restaurant at Anantara Layan Phuket Resort

A memorable meal often concludes with a special dessert, a complimentary surprise from the chef, or a favourite aperitif. But for those seeking something truly unique – something with a touch of “wow” – Anantara Layan Phuket Resort has unveiled Dara Cuisine Phuket, a Thai restaurant featuring its very own observatory.

Guests are invited to enjoy a remarkable rooftop experience, where a large high-resolution telescope – the only one of its kind in Phuket – offers real-time views of the stars. The evening is further enriched by a captivating lecture from a professional astronomer, all set against a romantic and atmospheric backdrop. Dara Cuisine Phuket is also proud to be the first restaurant in Thailand to feature an integrated observatory.

The name Dara Cuisine Phuket clearly reflects its inspiration: the stars – long regarded as the guiding lights for sailors and a source of fascination since ancient times. The restaurant, along with Thailand’s first integrated observatory, is located within the resort, just a short golf cart ride away from the electric lights that can hinder optimal stargazing.

The dining area, located on the ground floor, is styled in a contemporary design, enriched with decorative elements that evoke celestial maps and the spirit of exploration. One side of the room features an open kitchen, offering guests a captivating view of the chefs at work.

Open for dinner only (with cooking classes led by Anantara’s team of chefs held during lunchtime), Dara Cuisine Phuket offers contemporary Thai cuisine inspired by the country’s four regions. Signature dishes include deep-fried squid with minced pork and Hong pork – local Phuket specialities; Khao Soi with river prawns, based on a renowned celebrity recipe; and a young jackfruit salad with crispy sweet potatoes, showcasing Northern Thai flavours. From the Central region comes green curry with lobster and Miang Kham with foie gras – an inventive take on the classic Thai snack. The menu also features deep-fried frog legs with fish sauce and pork belly marinated in a unique blend of egg yolk and jaew sauce, representing the bold tastes of the Northeast.

Dara Cuisine Phuket also produces its own high-quality fermented fish sauce and maintains a sustainable herb garden, designed with both ecological and environmental principles in mind.

Head Chef Suphakan “Hong” Lianpanich explained, “The concept behind Dara Cuisine Phuket is simple. We respect and honour nature, carefully consider the taste and quality of local ingredients, and allow each element to speak for itself. In addition to growing our own herbs, we collaborate with local farms and fishermen who value the ecosystem and environment. This not only supports the local community but also ensures that we work with the finest seasonal produce.”

For dessert, highlights include the goat’s milk and honey ice cream, served with cashew nuts sourced from nearby Krabi. Another unmissable feature is the selection of signature cocktails, crafted with local ingredients and inspired by the characteristics of the stars and zodiac signs. Each drink is presented with striking flair, featuring creative garnishes and imaginative presentation.

Of course, one of the most unforgettable activities at Dara Cuisine Phuket is stargazing – not the casual kind with a blanket on the lawn, but a guided experience through a telescope in the restaurant’s rooftop observatory. Here, an astronomer – the “Sky Story Teller” – shares fascinating insights and captivating stories about the stars and constellations.

Each stargazing session lasts approximately one hour and takes place in a small observatory room with an openable dome, accommodating up to six guests at a time. Two options are available: a standard session from 7:30 to 8:30pm, or a 45-minute private session. Private viewings are limited to three couples and must be reserved at least one day in advance. Pricing varies according to the chosen beverage package.

TATLER TIP

  • Head up to the rooftop for a sunset drink, then head down to the restaurant for dinner and stargazing before heading back down for dessert.
  • Weather conditions have a huge impact on stargazing, and the best time to see the stars is in winter.
