A Parisian dream team will transform the eastern end of Wan Chai into a new culinary destination
Hong Kong Tatler Dining can exclusively reveal that Serge et le Phoque (“Serge and the seal” in French) will be opening in Wan Chai on August 15. This surprising new venture is the latest project by friends and partners Charles Pelletier and Frederic Peneau, the latter the man responsible for Le Burq and Le Chateaubriand, two of Paris’s most desirable restaurants. The duo’s idea of setting up a casual fine dining restaurant in Hong Kong came about just over a year ago, and found a site in the juncture between Wan Chai Road and Cross Street, amid one of Hong Kong’s most chaotic market districts.
Manning the kitchen will be none other than Christophe Pelé, the young talent formerly of La Bigarrade (before he handed over the reins to Yasuhiro Kanayama in 2012). The 60-seater restaurant is split into a bar area and main dining room, and will serve a menu of simple dishes that can be had with selections from an all-natural wine list. In the beginning, the venue will operate simply as a bar serving snacks before eventually opening for full lunch and dinner service.
Pelletier tells us that the idea of Serge is for “people to enjoy themselves, to relax after a big day.
