Executive Chinese chef Chan Hon Cheong of One Harbour Road has unveiled a selection of seasonal Cantonese creations that showcases the finest ingredients at their peak, where each dish is an expression of heritage flavours and techniques executed with refined culinary artistry.
A highlight on the menu is the pan-seared fish maw roll, a sophisticated composition that brings together braised pork belly, seasonal Yunnan termite mushrooms, fresh yellow fungus and premium Wuchang rice from the Northeast of China. The filling is lightly pan-seared before encasing within tender fish maw and accompanied by a rich termite mushroom sauce. The dishe delivers a wonderfully soft and chewy texture that bursts with umami and earthiness with each bite.

Desserts at One Harbour Road are equally inventive. Drawing inspiration from classic Cantonese egg custard tarts, Chan incorporates pistachio into the classic silky custard filling, which is then enveloped in a delicate lattice of shredded pastry before deep-frying to golden perfection. The resulting treat is an indulgent interplay of textures and flavours, where the nutty sweetness of pistachio complements the buttery richness of the custard.
The steamed sesame and almond rolls offer a contemporary interpretation of the beloved black sesame roll. Crafted using traditional techniques, layers of freshly ground almond and black sesame are combined to retain the dessert’s representative glutinous texture, while the pairing of these two classic flavours offers a harmonious conclusion to every meal.
The seasonal menu is available at One Harbour Road from now until October 15. Guests dining at selected Hyatt restaurants from now until September 30 can also earn up to double World of Hyatt Bonus Points.
