Perla restaurant introduces a talented team and incredible southern Italian seafood cuisine
Located at the International Commerce Centre's 101st Sky Dining level, the recently opened Perla restaurant highlights southern Italian cuisine with a focus on fresh seafood.
Perla is led by head chef Fabiano Palombini, who hails from Abruzzo in southern Italy and has over 35 years of experience under his culinary belt working in Michelin-starred restaurants across Europe and North America. Victor Judéaux, the restaurant's new manager, has previously worked alongside distinguished Michelin-starred chefs such as Yannick Alléno and Pierre Gagnaire. Perla boasts a talented team that seeks to provide guests with the finest seafood cuisine from southern Italy.
The 6-course "Above The Sea" degustation menu is a prime example of their expertise.The culinary journey includes dishes such as cured striped jack, accompanied by cucumber, green apple, and horseradish; char-grilled langostino, served with wakame seaweed and a sweetcorn reduction; pumpkin soup made with sea urchin, pumpkin oil, and red prawn. Pasta dishes include spaghettone with cacio, pepe, and sea urchin, or the chef's signature dish, Virtù, a mix of short pasta and a selection of premium seafood.
