Inspired by local delicacies, the renowned chef is projecting his view of the city onto the dinner plate
Chef Pierre Gagnaire is back this April, as he presents a special menu inspired by Hong Kong and its delicacies featuring the local cuisine’s favourite ingredients such as dried shrimps and Chinese sausages in addition to the Captain’s Bar own locally-brewed beer.
The “Tribute to Hong Kong” menu is based on Gagnaire’s knowledge of the local cuisine and his experience in exploring the best the city offers. Each course is, as normal for the restaurant, composed of multiple small plates. The tasting menu showcases chef Gagnaire’s inspiration gleaned from the cuisine Hong Kong proudly delivers.
The French chef’s new tasting menu will bring multiple preparations of fresh oysters, together with a recurring seafood theme, from pan-seared langoustine with citrus peel, razor-clams and scallops with seaweed Mariniere style, to jelly fish and grilled shiitake pickled with locally brewed beer. Among dishes featured in the tasting menu, some of the courses will be selected to form the four-course tasting menu, priced at HK$988 per person, while the full seven-course tasting menu is priced at HK$1,688 per person.
Chef Gagnaire will be present at his restaurant from April 14 to 20, but the tasting menu will be available for guests until April 30, 2016.
