From farm to table—bringing the best of Hong Kong to French cuisine

Odyssee welcomes new head chef Vito Chan, a celebrated chef and veteran in Hong Kong. Established in 2019, Odyssee presents contemporary French cuisine that uses ingredients from all over the world prepared with modern cooking methods.

With more than 15 years of experience, Chan worked in Michelin-starred restaurants such as Amber and L'Atelier de Joël Robuchon in Hong Kong before training under Donovan Cooke in Melbourne Australia. He opened his restaurant Ted’s Hideout and C’est la Vic which offered a sous vide style cuisine. The chef established modern French restaurant Soulmate in Tsing Yi, and Root in Central, which was loved by gourmands and socialites for its modern fusion cuisine that incorporates local products into the dishes.

Chan is eager to bring his farm-to-table concept into the menu of Odyssee. He loves local farm products and always searches for the highest quality and freshest local ingredients for his cuisine. It is his passion to make full use of local products while incorporating them with seasonal ingredients sought from all over the world.

A big fan of French cuisine, Chan enjoys the sophistication of their traditional cooking style while being open to other innovative cooking methods such as fermentation which can enhance the flavour and texture of the ingredient, or sous vide which brings out the texture and flavour of an ingredient.

Signature dishes include Miyazaki A4 sirloin, pumpkin tofu, fermented pumpkin and red wine jus, charcoal pigeon with cured cantaloupe, Sichuan pepper jus, Ossetra Caviar spanner crab with salted egg yolk and egg white foam, and langoustine, hairy melon, beetroot and vin jaune sauce.
