The newly refurbished restaurant at Wynn Macau reinvents Japanese fine dining with excellence

Since its opening in 2006, Wynn Macau’s Japanese restaurant Mizumi has been an establishment synonymous with the finest of gourmet experiences. As the hotel enters its 10th anniversary, it unveils a revamp, with a new face taking the dining destination to new heights. The new Mizumi brings together three world-acclaimed Japanese culinary masters under one roof: Tsutomu Shimamiya, Kazuhito Motoyoshi and Junichi Yoshida, specialising in sushi, tempura and teppanyaki respectively.

The new Mizumi promises more than a conventional dining setting – it’s an interactive experience. Guests are welcomed by a steel yellow “dogami” sculpture by renowned artist Gerardo Hacer, leading into the magnificent dining room in red and white, Japan’s national colours. The newly-decorated restaurant is accented with Japanese Obi-inspired carpeting and custom artwork created by artist Sush Machida.

Mizumi sources the finest seasonal produce from all over Japan, including Hokkaido sea urchin and marbled beef from Ishigaki Island. Revered as the master of Edomae-style sushi and the owner of Sushi Zen in Hokkaido since 1971, master chef consultant Tsutomu Shimamiya brings his honed craft through decades of training to iconic status in Japan and abroad. Chef Shimamiya brings an authentic taste of sushi to Mizumi, each created by trained chefs to create morsels of the highest standard.

Kazuhito Motoyoshi brings finesse and top-notch quality to tempura as his restaurant Tempure Motoyoshi has earned world acclaim. The celebrated chef brings his preference for seasonal vegetables and meticulous preparation to Mizumi.

Teppanyaki is a unique Japanese art form, involving as much culinary art as theatrical performance. The finest ingredients are quickly seared and tossed into dishes by Junichi Yoshida, whose restaurant Ishigaki Yoshida cements him as a rising star of the country’s teppanyaki scene. Chef Yoshida presents his unique take on teppanyaki with exquisite wagyu beef cuts, together with a few signature dishes including scrambled eggs with sea urchin and truffles.

In addition, Mizumi promises signature dishes which include deluxe sushi selection, sea urchin tempura, abalone tempura, Japanese Yaeyama wagyu beef, and sea urchin in scrambled eggs.
