Fancy some Japanese meat tonight, but don't know where to go?

Premium Japanese Wagyu is revered for its high level of fat marbling. Tuck into luxuriously juicy cuts imported from different regions in Japan at these restaurants.

Magosaburo

Highly Prized Delicacy

Magosaburo (04-11A and 05-01 Ion Orchard, tel: 6634 1411) serves Kobe beef, renowned for its rich flavour, tenderness and well-marbled texture. The restaurant offers more than 10 types of cooking methods including yakiniku, yakishabu, shabu shabu (below) and sukiyaki. You can even have fine slices of beef loin gently steamed over hot stones.

A highlight here is the elegant tableside preparation; the centre of each table is fitted with a smoke-free grill, which is used for searing slices of Wagyu to your desired doneness. The restaurant also offers Miyazaki Champion Beef known for its smooth texture, juicy flavour and delicate taste.

Waku Ghin

Luxe Beef Bowl

Chef Tetsuya Wakuda wanted to offer diners a dish that is simple yet comforting, so he created a Japanese beef rice bowl for The Bar at Waku Ghin (02-01 Atrium 2, The Shoppes at Marina May Sands, tel: 6688 8507). The Aburi Ohmi Beef with Sansho comprises beef tenderloin, grilled over very hot charcoal to ensure that the outside of the meat is perfectly cooked, while the inside remains tender and juicy. The beef slices, complemented by a sansho pepper sauce, rest on a bed of grilled Japanese leeks, fresh arugula salad, crushed white sesame seeds and fluffy Japanese rice.

Keyaki

Top Breed

At Pan Pacific Singapore’s Keyaki (tel: 6826 8240), you can enjoy Ohmi Wagyu prepared teppanyaki-style (below) or served as sashimi. The Ohmi Wagyu is grade A4 and sourced directly from a farm in the Shiga prefecture, where it is available in limited quantities. Ohmi Wagyu is renowned for its sweet flavour and very fine meat grain. It is amongst the top three varieties of Wagyu as rated by the Japan National Tourism Organization (the other two are Kobe and Matsusaka Ushi).

Mikuni

Au Naturel

The August seasonal menu at Mikuni (Level 3 Fairmont Singapore, tel: 6431 6156) offers a variety of decadent Wagyu dishes. One of the highlights is the Miyazaki Wagyu steamed with seasonal vegetables such as carrot, baby corn, earthy mushrooms and asparagus. The delicate slices of sirloin are presented in a steamer box, and cooked over the vegetables. Besides Miyazaki beef, different cuts of Kagoshima beef are also available on the restaurant’s teppanyaki and robatayaki menus.
