Marble 8, despite its short time in the Kuala Lumpur dining scene, has already steadily built itself a reputation as one of the must-go places for steaks. It has seen regular visits from the country's most prominent faces and has never disappointed when it comes to its expertise -- steak.

Sirloin on the bone
First up is the sirloin on the bone, a cut famed for its flavour rather than its tenderness. With a ratio of 20 per cent fat and 80 per cent meat, this cut is for those who prefer their steaks with some fat.
While you can have the steak with a sauce of your choice, real steak connoisseurs should have their meat with either the Himalayan or rosemary sea salts to really bring out the meat’s natural qualities. The sirloin proved to be delightful till the last bite, with moderate tenderness for those who like a bit of chew.

Tenderloin on the bone
If you want a softer cut, go for the tenderloin on the bone, a speciality at Marble 8 as this cut is not often cooked with the bone still attached, giving it subtle properties from the bone. As the name implies, tenderloins are renowned for being lean in addition to being succulent and these qualities definitely shine as soon as you take that first bite. Low in fat with a buttery texture and a wonderful pinkish hue in the centre, Marble 8’s tenderloin is a perfect example of what a dry-aged premium cut of steak should taste like, making it a winner in our books.
Boneless ribeye
Well marbled with a decent amount of fat spread throughout the meat gives the ribeye a rich flavour that is beloved by most steak lovers. Fat is where a lot of the distinctive flavor of beef comes from, making this cut a well-rounded choice between the tenderloin and the sirloin. Add a twist of lightly grilled lemon to your meat to give it a nice citrusy kick that complements a sprinkling of Himalayan salt.

60 days old premium reserve aged selection ribeye
Due to its prolonged aging process, the 60 days old premium reserve aged selection ribeye has developed a striking taste that is difficult to pinpoint. Not for the timid eater, this ribeye is drier than the other cuts featured here, with a slight hint of gaminess that builds up the more you have it. Not everybody will be able to appreciate this cut of meat and is best reserved for those who have a strong stomach and a wide palate.
