Jamón, according to Jason Atherton, is the perfect snack. “It just works. Now, pretty much every restaurant of mine has a bellota on the bar,” he says. “Even when I’m back at my restaurant, Pollen Street Social, I’ll sit at the bar and ask them to slice me some ham.” In the March issue of Hong Kong Tatler, Atherton waxes lyrical about the beauty of Spanish hams and where to find the best (hint: one such place is his own newly-opened restaurant, Ham & Sherry in Wan Chai).
