The restaurant at MGM MACAU houses an impressive collection of wine to pair with Chinese delicacies

MGM and its restaurants are globally renowned for their deep commitment to wine, with a cellar collection and versatile food pairings curated by a team of knowledgeable sommeliers. Among MGM's acclaimed restaurants is the Imperial Court at MGM Macau, which showcases Lingnan cuisine and has earned numerous wine awards in the past decade. With an extensive selection of Portuguese wines available in Macau, MGM boasts one of the city's most comprehensive collections.

One standout wine in MGM's collection is the 2010 Niepoort Charme from Douro, which features smooth tannins and fruitiness that share similarities with delicate Pinot Noir. It pairs perfectly with the crispy roasted free-range chicken with organic flaxseed. The wine shows refreshing cherry and raspberry notes, as well as tertiary notes of mushroom, tobacco, and tea leaves that provide an elegant structure to balance the fattiness of the chicken skin.

Another noteworthy wine in MGM's collection is the Domaine de Chevalier Blanc from Pessac-Léognan of Bordeaux, which is more full-bodied and rounded on the palate, with notes of waxy lemon, melon, and yellow apple. This wine goes well with the soft and creamy scrambled egg, topped on a wok-fried blue lobster with minced pork, black bean, and garlic that pays homage to Cantonese culinary traditions. The fruitful and ripe harvest in 2016 allows a higher proportion of wine aged in new barrels, which brings out notes of nuttiness and minerality, making it a great pairing for the umami flavours of the French blue lobster.
