The places we return to often say just as much about us as the meals themselves—comfort dishes become rituals, neighbourhood cafés become second homes and favourite restaurants become part of our everyday stories.
This time, we catch up with Pam Begre. In her words, she is “a hotelier, a restaurateur, and a sommelier. A mother of three and a student of life!” Begre is a partner at restaurants Celera and Mesy, and Parallel resort too.

What are regular restaurants you enjoy going to on your day off?
Restaurant Tsumura is always a win. Sitting in front of Tsumura-san and having the sashimi omakase while he explains why he picked a particular fish is always special. To this day he still personally picks fish for the restaurant.
What is a new restaurant you’ve recently discovered and enjoy?
Good Luck Hot Pot. I really enjoy their style of shabu-shabu, hospitality and all–their broth is my favourite. I’m happy that the seafood they have for hot pot is the star rather than being an afterthought.
Where do you get your favourite dessert?
I’m a big fan of chef David Amoros’s El Born original cheesecake. Delicious.
Where is your favourite cafe? What is your coffee order?
I default to a cortado or a simple latté, but aside from the beans being good, the milk has to be stellar too. Believe it or not, I’m a coffee newbie. For the longest time, I would avoid it because caffeine did not agree with me. But I very much love the smell, and my curiosity got the best of me. I even enjoy a long black at times now, and I love going as far as exploring my coffee curiosity in different ways. I enjoy visiting Yardstick Aguirre, Curator, Common Man, Omotesando and St. Ali.
What is your go-to spot for a nightcap?
I like Big Fuzz and their Sound of Silver cocktail; it’s always a good idea. Blackbird’s lounge is another go-to. I also like Caviar Bar and its discreetness and completeness.
What is your favourite restaurant for breakfast or brunch?
Sala is my go-to. I like that I can depend on going there to just have a good time.

What is your favourite restaurant for late-night eats?
We always order in from Eat Fresh! Can’t go wrong with warm Chinese Food in the belly.
Where do you order your favourite Filipino food from?
I love Sarsa’s palabok. I’m a big palabok eater. I’m salivating, just typing this.
Where do you order your favourite bread from?
I don’t do this often, admittedly, but Scratch is my go-to when it comes to bread. I trust it; it is always heartwarming and so good!
Where do you go for your favourite steaks or meats?
I tried Smith & Wollensky recently, and I was very happy with it. I think they’ve got it down.

Where do you go for your favourite seafood fix?
Aside from Tsumura, I also enjoy ordering a box of Fine de Claire through Dough and Grocer, with a bottle of fine Pouilly Fumé to just enjoy life, oh beautiful life!
Where do you go if you want to dine solo?
I like to dine solo very much! But I would have to repeat an answer again...Sala! I like hearing my own thoughts there as I sit through my meal.
Where do you go for date night?
My husband and I really enjoy making the rounds: Kasa Palma, Inatô, Metiz, Gallery by Chele, Asador Alfonso, Automat and we can’t wait to try more!
Where do you go for your favourite noodles/pasta?
La Carinderia, hands down, for pasta. Please visit if you haven’t. Pasta perfetto! Do not forget to try vitello tonatto and their tiramisu is delish. For ramen, Yushoken is my favourite.
