Imperial Court at MGM Macau joins hands with Hennessy X.O to launch the exclusive Refined Indulgence Pairing Menu, as part of the landmark Hennessy X.O Limited Edition designed by Kim Jones project, highlighting the juxtaposition of art and craftsmanship through heritage and innovation.

Chef de cuisine Homan Tsui has curated a unique eight-course menu with delicacies from Lingnan cuisine that draw on classic savoir-faire to highlight the timeless elegance of Hennessy’s cognac, as well as contribute to Macau's gastronomic kaleidoscope as a Unesco Creative City of Gastronomy.

The tasting journey begins with a glass of Hennessy Connection, a riff on the traditional French Connection No. 2 cocktail. To pair with this aperitif, Chef Tsui has crafted an appetiser platter which includes chilled fresh abalone marinated with Japanese sake, pan-fried Kagoshima A5 Wagyu beef and chilled marinated jellyfish bulb.

For the steamed crab claw with glass noodles and huadiao rice wine, Tsui and his team have sourced hefty mud crabs from the Pearl River Delta. The huadiao wine enhances the freshness and sweetness of the crab while complementing the pairing with Hennessy X.O. Moreover, Tsui’s homemade springy glass noodles absorb the essence of the huadiao wine and crab jus, making for yet another highlight that you can’t miss.

The menu also features Imperial Court’s signature dishes such as braised partridge porridge and Yunnan ham; and crispy fried chicken skin with shrimp mousse.
