The fourth edition of Project Food Prints at The Halia at Singapore Botanic Gardens showcases sustainably farmed Dorper lamb.

The Halia’s Project Food Prints is a series of one night only dinners that aims to promote the movement of sustainably sourced produce while educating diners on the source of the food they consume. On 23 October, guests will taste and discover Dorper lamb from Australia.

 

Dorper lamb is a hybrid of the Dorset Horn sheep from England and the Persian sheep from Iran. These mixed-breeds are low in fat and are naturally tender as they grow into maturity in only 4-6 months. The lambs are raised with no artificial hormones and are reared in a free-range environment with access to fresh grass, legumes and wild herbs. The mild, non-gamey flavour of the lamb can only be attributed to this special breed and unique rearing environment.

 

Each of the five-courses, save the dessert, will be made with different cuts of Dorper lamb. Look forward to Dorper Lamb Carpaccio and Tartare, Crisp Sourdough and Mache; Grilled Dorper Lamb, Greek Salad Garnish; and Ravioli of Braised Dorper Lamb Neck, Parsnip, Pomegranate and Almond. Each of the five-courses will be paired with wines from Domaine de L’Hortus and Clos du Prieur.
