Two months of gastronomic extravaganza gathers a sushi master, a Peruvian maestro, and a Scottish talent all under one roof

For two months this autumn, Landmark Mandarin Oriental is upping their game, as three world-renowned chefs will be conducting pop-up events at the hotel throughout a two month period. Among them are Peruvian chef Virgilio Martinez of South America’s Central Restaurante, Scottish chef Isaac McHale of London’s Clove Club, and sushi master Kenji Gyoten from sushi bar Gyoten in Fukuoka, Japan.

From October 17 to 23, The iconic hotel is hosting its first-ever sushi pop up restaurant showcasing the unparallel hontegaeshi (hand flip) technique of Edomae nigIri sushi. Recreating the restaurant experience at Gyoten in Fukuoka, Japan, the seven-day pop up event will serve a special market-fresh omakase lunch set, priced at HK$3,500 and dinner set at HK$4,500 per person.

London’s popular Clove Club then takes over from October 24 to 26 with a three-day dining pop-up, where Scottish chef Isaac McHale brings his signature unconventional tasting menus featuring unique dishes such as raw sea bream plum stone vinegar and horseradish and dry-aged Challans duck served in three ways. Guests attending the Clove Club pop-up event will start with a champagne cocktail receiption paired with four snacks, followed by an eight-course set menu with pairings of six wines included.

The highlight of the season is a two-night gastronomic affair, as the Friends of Amber series returns after previous sold-out events featuring Corey Lee, Andre Chiang, and Bjorn Frantzen.  On the evenings of November 21 and 22, acclaimed chef Virgilio Martinez of Peru’s Central Restaurante is collaborating with Richard Ekkebus, the hotel’s culinary director and executive chef of Amber. Known for foraging and using indigenous ingredients sourced from the jungle, desert, mountains, and sea of Peru, chef Martinez will showcase four snacks and an eight-course menu, priced at HK$3,488 per person, inclusive of a signed copy of the chef’s newly published monograph published by Phaidon.
