Thanks to the strong support of gastronomes, the Chef's Recommendation Table Menu at Kushiro has become highly popular over the summer. For those who have yet to sample the menu, now is the time to reserve a table to enjoy the last refreshing taste of the season.
The ten-course menu incorporates a variety of top-quality and exclusive ingredients from Japan and beyond, all of which combine to bring epicureans the finest culinary indulgence. Handcrafted by the restaurant’s top chefs, the meal merges traditional and innovative culinary techniques to achieve a gastronomic feast. From the cooking to the saucing and plating of the dishes, every element and approach is well considered. The highlights include dishes such as:
- Foie gras pate beetroot paper with mint passion fruit jelly
- Fish maw katsu with yuzu truffle pepper onsen tamago sauce
- Original box Royal Cristal Caviar with Okinawan peanut and tofu
- Grilled Kagoshima wagyu striploin with truffle yuzu kosho beef jus
- Baked French blue lobster with salmon roe
- Matsuba crab risotto with tatami iwashi (baby sardine sheets)
This menu is only available at dining tables, with a limit of four tables per day and a minimum of two guests per table (five or more guests will enjoy a complimentary upgrade to a VIP room, with a maximum of eight guests). Select ‘main dining table’ when making the reservation while specifying ‘Chef’s Recommendation Table Menu’.
Available until October 31, 2022, every reservation with four guests will receive a 2022 Year of the Tiger edition Kushiro x Sato Kosho limited edition ginjo 720ml sake (valued at HK$1,080).
