Celestial Court’s new menu spotlights sustainably-sourced seafood and recipes that capture the essence of traditional Cantonese cuisine

In celebration of the arrival of new executive Chinese chef Kan Wong, Celestial Court has launched a new tasting menu guided by Wong’s culinary expertise. With over 35 years of experience under his belt, Wong is a master of Cantonese cuisine, especially its seafood-led dishes. Drawing on this technical prowess, Wong will present Chef Wong’s Epicurean Voyage Tasting Menu, a multi-course experience where traditional recipes are executive with innovative techniques.

Ingredients on the menu are handpicked by Wong, ensuring each selection is certified by the internationally recognised Aquaculture Stewardship Council (ASC). This commitment to sustainability defines the menu and the experience.

Celestial Court believes that true luxury is found in the balance between world-class culinary artistry and environmental stewardship. Guests are invited to embark on this six- or eight-course journey designed to delight the senses while respecting the natural world. Highlights on the menu include double-boiled fresh fish maw soup with conpoy, sea coconut and Chinese glycosmis; sautéed sliced green lip abalone with Chinese yam, local leek and signature shrimp oil; and deep-fried cod fish fillet with salted lemon bean sauce. 

Chef Wong’s epicurean voyage tasting menu is available at Celestial Court until July 31, 2026 and priced from HK$1,288 per person.
