Chef Chele González introduces a concept inspired by his hometown
The prolific chef Chele González introduces yet another new concept with Cantabria at The Westin Manila. Cantabria, an elevated Spanish dining concept is named after González’s hometown on the northern coast of Spain, a location known for its unparalleled culinary treasures from land to sea. As González welcomed us into the warm-coloured, red-walled restaurant he gushed about his hometown. With imposing, large lamps hanging overhead, the space gives a nod to the regional aesthetic as it is also thoughtfully decorated with beautiful Spanish tiles, plus paintings and photos of the region, and even a stylistic map to boot.
González excitedly communicated that Cantabria is celebrated for some of the world’s best seafood and dairy, sharing that his menu this time around is seafood-forward. It also boasts a range of creative tapas, while the mains celebrate heritage meals and comforting Spanish favourites, some of which he grew up eating every weekend, cooked by his mother. This menu is his love letter to home. Through his creations, we were given a glimpse into some of his cherished foodie and childhood memories, while other dishes pay homage to the region’s famed gastronomic wonders. From the summers of his youth to his fascinating culinary beginnings, Cantabria overall is a celebration of his roots.

With seafood put centre stage, upon entering the restaurant we are quite literally greeted by a display of stunning fresh produce imported straight from Cantabria. From some of the best anchovies in the world, and decadent caviar, to plump oysters and a phenomenal wild turbot that is prepared tableside, there is no shortage of treats to feast on. More treasured seafood finds at Cantabria are their baked grouper with roasted potatoes, garlic, and parsley emulsion or sliced snapper with avocado and lime salsa, radish and cilantro oil, to name a few. Furthermore, the restaurant also puts forth a variety of meaty mains like premium Iberico dishes, succulent Wagyu creations, or a hearty Angus rib-eye.
