Dolce Vita, the grande dame of Italian dining, one with a poolside view to boot, has refreshed its menu with more dishes crafted with signature grace and finesse.

Brasserie Wolf is turning up the heat with Chef Claudio Sandri's new toy - a Josper grill. Pronounced ‘hosper', this Spanish import is one mean grilling machine that Chef Sandri feeds with a slow-burning white charcoal. Essentially a sealed oven fueled by charcoal, the grill is capable of retaining the natural juices of a steak while imbuing it with the smoky flavour of charcoal. But the experimental Swiss chef is not just feeding the oven with beautifully marbled steak. He's throwing tomatoes, foie gras and mushrooms into the fire as well.
Begin with the tomato soup, where the humble tomato takes on a caramelised, smoky edge after its Josper-baptism. Buffalo mozzarella crisps add body to the dish while a drizzle of basil oil ties in all the flavours beautifully. Save your appetite for the rib eye steak too, grilled to perfection and served with roasted bone marrow. Meat and marrow make for excellent bedfellows. A bordelaise sauce accompanies the dish, though we find the meat flavourful enough to be simply enjoyed with just a medium-bodied glass of red.
