Savour two of the world’s most coveted ingredients at Sabatini’s Central location
It’s the season for luxurious dining. Sabatini Ristorante Italiano in Central is launching a new tasting menu that draws on two hyper-seasonal ingredients. The limited-time Blue & Black degustation menu offers a luxurious tasting experience that celebrates two of the world’s finest ingredients: Brittany blue lobster and Australian winter black truffle.
The menu begins with a choice of starter. The New Zealand scampi carpaccio with Daurenki caviar is a refreshing yet indulgent choice, where the robust umami of caviar is balanced with green apple, fresh lemon and a drizzle of olive oil. Another standout is the slow-cooked veal loin in preserved tuna sauce, a hearty option that pairs tender meat with a rich tonnato-style sauce (made from emulsified tuna, egg yolks, anchovies, capers, lemon juice and olive oil). The final option is a nod to the two ingredients leading the menu; the blue lobster medallion with Australian winter black truffle salad presents the essence of both ingredients in its purest forms, laid over a bed of refreshing salad. A soup course follows, where diners have the choice between porcini mushroom soup and a blue lobster bisque with croutons.

Sabatini’s homemade pasta dishes continue the meal. The pappardelle in Vaccinara (Roman-style) oxtail sauce delivers flavour-packed bites, while the tagliolini is comforting, simple and finished table-side with generous shavings of Australian winter black truffle. Main courses are similarly robust, with choices ranging from char-grilled guinea fowl meatballs to Wagyu beef tenderloin rossini with Australian winter black truffle.
Two meticulously crafted desserts conclude the meal on the sweet note; choose between the almond tarte with vanilla ice cream or Sabatini’s signature tiramisu.
The Blue & Black degustation menu is available at Sabatini Ristorante Italiano from June 8 to August 16, 2026. Live band performances are scheduled to accompany dinner services at Sabatini from 7pm to 9.45pm, Tuesdays to Saturdays, adding musical flair to your evening meal.
